Oh My! Can It Really Be?!?!!!!

Yes, it's me, and I'm still breathing!!! Then again, most of you already know that since we either see each other or "talk" on Facebook all the time :-) But thanks to newly-married Christine R.'s "friendly" reminders lighting a fire under my a*s, I'm back posting once again. Yay! It's nice to know I've been missed :-) I figure once the craziness of Halloween is over and the colder, winter weather approaches, I'll have more time and energy to start up again with my cooking and baking. Not to worry, though, as I have been taking pics during the past few months so I can catch you up on some of the yumminess I've made and/or eaten along the way :-) Heck, today I made a super easy baked three-cheese tortellini with tomato cream sauce and for the Halloween party I'm going to on Saturday, I'll be making caramel apple bars and mini whoopie pies. Nope, no calories in any of that!!!

I do want to give everyone a quick explanation, though, as to why I hadn't posted all summer long. This past summer was an extremely hot one here in New York. Of course, heat and Multiple Sclerosis DO NOT play nice together :-( It was a tough summer to get through for me to say the very least. Other than being a mom to EJ, hardly anything else got done, as I didn't have an ounce of energy to spare once he was off to dreamland each night. Also, between August and October I had 5 medication changes which whacked my body out. As it is, I still need at least a one-hour nap mid-morning/early afternoon or I can barely function for the remainder of my day. I missed out on so many activities with EJ this summer, as I basically had to stay in the house in air conditioning from 10:00 - 3:00 every day. Annoying as all heck, but I have to do what I have to do to preserve what health I am blessed with. But, now that it has started to cool off, I am feeling better and ready to get back into the kitchen once again :-) Plus, I'm looking to get back into cake decorating. Nothing fancy at all, but I find it very relaxing and quite enjoyable. EJ will definitely benefit from it as we've recently started the "EJ's Special Friday After "School" Treat!" So far he's had mini brownies; then a huge, round chocolate chip cookie I used to teach him shapes and fractions (as best as you can teach a 2-year old fractions LOL!); and last week I made him apple cobbler cupcakes with pumpkin pie icing. Good thing the kid is so active and runs around non-stop so he can burn off all those calories! Of course, the down side to that (not that there really is one), is he's always coming up to me saying "I want special treat." He's such a cutie pie!!!

OK, as this has gotten quite lengthy, I'll stop it here. Again, look for more frequent posts from me starting November 1st. I hope everyone has a "Bootiful", fun-filled Halloween!!! Hey, a comedian I am not ;-> Until next time...
